SPINACH SOUP 
1 lg. can College Inn chicken broth or use homemade broth
1/2 broth can of water
3 pkg. chopped spinach, thawed & drained well
6 eggs
1 c. grated locatelli cheese

Egg substitutes may be used. These work very well.

Bring broth and water to a rapid boil. Beat eggs well. Mix eggs and cheese into spinach. Add spinach mix to boiling broth. Simmer about 30 minutes. Serve with Italian bread for a nutrient packed dinner.
