FRESH BLUEBERRY PIE | |
1 c. sugar 1/4 c. flour 1/4 tsp. salt 1/2 tsp. ground cinnamon 1/4 tsp. grated lemon rind 4 c. fresh blueberries, washed 1 tbsp. lemon juice Pastry for 2 crust 9 inch pie, unbaked Combine first 7 ingredients, Turn berry mixture into 9 inch pastry shell. Cover with remaining pastry. Trim, turn under pastry and flute edge. Cut slits in top of pastry crust. Bake at 425 degrees for 15 minutes. Reset oven to 350 degrees. Continue baking 30 to 40 minutes. |
