PEANUT FONDANT ROLL 
Cook in salted water 1 peeled medium potato. Drain and mash, adding confectioners sugar a little at a time until mixture is stiff and mixture can be rolled or patted 1/4 inch thick on oblong shape on waxed paper. Spread with peanut butter and roll up beginning with long edge. Set aside to let set. Slice with a sharp knife.
