QUICK 'N EASY CHICKEN TACO RICE 
1 lb. boneless chicken (or beef or pork), browned
1 1/2 tbsp. oil
1 1/2 c. water
1 (8 oz.) can tomato sauce
1 pkg. taco seasoning mix
1/2 c. shredded cheddar cheese (opt.)
1 1/2 c. Minute Rice
1 c. vegetables
1 med. red pepper, cut into sm. strips (opt.)

Bring browned chicken, water, tomato sauce and taco seasoning mix to a boil. Reduce heat and add vegetables and pepper. Bring to a boil. Stir in rice. Cover; remove from heat, let stand 5 minutes. Fluff with fork. Sprinkle with cheese. Serve with tortilla chips if desired.
