CHICKEN PUFFS 
2 tbsp. butter
1/4 c. all-purpose flour
1 egg
1/4 c. shredded process Swiss cheese

Melt butter in 1/4 cup boiling water. Add flour and dash salt; stir vigorously. Cook and stir until mixture forms a ball that doesn't separate. Remove from heat and cool slightly. Add egg and beat vigorously until smooth. Stir in cheese. Drop dough onto greased baking sheet, using 1 level teaspoon dough for each puff. Bake at 400 degrees for 20 minutes. Remove puffs from oven; cool and split.

FILLING:

1 1/2 c. chopped cooked chicken
3/4 c. chopped celery
2 tbsp. chopped parsley
1 garlic clove, minced
1/4 lb. Velveeta cheese, cubed
2 tbsp. toasted almond slices

Mix with 1/3 cup mayonnaise.
