POTATOES WITH GARLIC 
4 Idaho potatoes (med. to lg.)
1/2 c. unsalted butter
10 cloves garlic, unpeeled
Salt and fresh ground black pepper to taste

Peel and quarter potatoes. Boil 10 minutes. Drain. Preheat oven to 400 degrees. Put potatoes in roasting pan. They should touch but not sit on top of one another. Sprinkle with pepper and salt. Add unpeeled garlic cloves. Dot with butter. Roast 30 minutes or until browned. Turn potatoes so all are cooked. Serve with cooked garlic.

NOTE: Don't use garlic in recipe if the skin is cracked or split.
