APPLE--WALNUT CAKE 
4 c. apples, chopped
2 c. sugar
2 eggs
1/2 c. oil
2 c. all-purpose flour
2 tsp. baking soda
2 tsp. cinnamon
1 c. walnuts, chopped

Sift flour. Combine apples and sugar, let stand. Beat eggs slightly. Beat in oil and vanilla. Mix in flour, soda, cinnamon, and salt. Stir alternately with apples and sugar, mix, stir in walnuts. Pour into greased and floured oblong pan 13 x 9 x 2 inch. Bake at 350 degrees for 1 hour or until cake tests done. Use lemon butter frosting.
