CHICKEN BROCCOLI CASSEROLE 
3 c. grated Cheddar cheese
1 c. mayonnaise
1/2 c. sour cream (or plain yogurt)
2 c. fresh or frozen broccoli pieces
1 c. cooked chicken (or more)
1 can cream soup (any favorite)
1 c. long grain rice

Take 1 cup long grain rice, 2 cups water - cook according to directions. Using a 9x13 pan, spread cooked rice and raw broccoli pieces evenly on bottom. Salt and pepper.

Mix 2 cups grated cheese along with all other ingredients. Spread over top. Sprinkle remaining cheese over and add paprika. Bake at 350 degrees for 30 minutes.

Note: Any favorite vegetable can replace broccoli.
