STUFFED ARTICHOKES 
6 med. artichokes
1 sm. onion, diced
2 garlic cloves, chopped
4 tbsp. oil
1 1/2 c. flavored bread crumbs
1/4 c. grated cheese
Salt & pepper

Cut stem and tops off each artichoke and wash. Pry open and remove prickly choke. Saute onion and garlic in 3 tablespoons oil. When tender, add bread crumbs, cheese, salt and pepper. Stuff each artichoke thoroughly and place in a pot, adding enough water to cover bottom half of artichokes; add 1 tablespoon oil. Simmer until tender, about 1 hour. Serves 6 to 8.
