STUFFED ROUND STEAK 
1 lb. round steak, thin
1 carrot, grated
1 zucchini, sliced thin
2 chopped hard-boiled eggs
1 garlic clove, minced
Olive oil
8 to 12 oz. tomato sauce
String

Trim excess fat from meat, pound with meat mallet. Combine small amount of olive oil and the minced garlic clove, spread over meat. Salt and pepper as desired. Combine carrot, zucchini and hard-boiled eggs. Place on steak and roll from end to end. Tie with string. Brown on all sides in small amount of oil. Place in shallow baking dish, cover with 8 ounces (or more if desired) of tomato sauce. Bake uncovered at 350 degrees for 1 hour. Serves 5.
