TAQUITOS 
Brown 1 pound sausage (hot or regular) and drain. Add 1 can of Rotel tomatoes, chopped. Let the juice cook on medium for 5 to 10 minutes. Add 1 dozen eggs, beaten (I add a little milk to eggs). At the same time add 3 ounces Velveeta cheese. Continue to cook over medium heat, constantly stirring, until eggs are scrambled and juice is gone.

Spoon onto any size flour tortilla and roll in foil sheets and freeze. When ready to use, warm in oven or toaster oven at 350 degrees for 15 minutes. Serve with picante sauce.
