SALAMI 
5 lb. ground round or extra lean hamburger
5 rounded tsp. Morton Tender Quick (meat cure)
2 tsp. mustard seed
2 tsp. garlic salt
2 tsp. coarse ground pepper
1 tsp. liquid smoke

Mix all ingredients and cover. Keep in refrigerator for 4 days, mixing once each day. Divide in 2 inch rolls on the 5th day and put on broiler pan so grease can drain off. Bake at 140 degrees for 8 hours, turning every 2 hours. Remove, wrap in foil and refrigerate or freeze.
