ENCHILADA CASSEROLE 
1 lb. ground beef
1/2 c. chopped onion
1 can chili with beans
1 can tomato soup
1 can enchilada sauce
1/2 can black olives, chopped

Brown beef and drain. Add all ingredients and simmer 15 minutes. Grease 2 quart casserole dish. Place 1/2 of meat mixture in pan. Add diced Velveeta, Cheddar and Parmesan cheese. Add broken Doritos. Repeat meat mixture and cheeses. Top with Doritos. Bake at 300 degrees for 30 minutes.
