TORTILLA CASSEROLE 
1 1/2 lbs. hamburger
1 med. onion, chopped
1 can (1 lb.) tomatoes
1 can (10 oz.) enchilada sauce
1 can (2 1/4 oz.) sliced ripe olives
1 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. pepper
1/4 c. salad oil
8 corn tortillas
1 c. cottage cheese
1 egg
1/2 lb. (grated) Jack cheese
1/2 c. (grated) Cheddar cheese
1 sm. bag (crushed) tortilla chips

Brown hamburger in part of the oil. Blend in tomatoes, enchilada sauce, olives, salt, garlic, and pepper. Bring mixture to a boil, reduce heat and simmer uncovered for 20 minutes. Meanwhile saute tortillas in rest of oil for a few seconds on each side. Drain and cut in half. Beat cottage cheese and egg. Spread 1/3 meat, 1/2 Jack cheese, 1/2 cottage-cheese, 1/2 tortillas in greased 3 quart casserole. Repeat layers using 1/3 meat sauce, all other ingredients, and top with last 1/3 meat. Top with Cheddar cheese and with tortilla chips. Bake uncovered at 325 degrees for 20 minutes.

This tastes good on top of a plate of shredded lettuce, topped with sour cream.
