FINNISH BUTTER COOKIES 
1 lb. butter, at room temperature
2 1/4 c. sugar
2 lg. eggs
4 c. flour (no more)
1 tsp. baking powder
1 tsp. baking soda
2 1/2 tsp. vanilla
1/2 tsp. salt

Can be fork mixed together starting with softened butter, sugar and eggs in a large bowl. Chill well, re-chill in freezer if it gets too soft while rolling and cutting. Bake at 350 degrees, don't let brown and dry too much. Cookies are done when bottom is light brown, in under 10 minutes. Let cool in single layer on flat surface, otherwise they will stiffen curly.

FROSTING: Start with stick of butter, creamed, add 2 teaspoons vanilla and 2 tablespoons milk; add 1/2 to 1 pound of confectioners' sugar until mixture is the right consistency for frosting.
