GREEN PEPPER & TOMATO SCRAMBLE 
5 lg. green peppers
2 lg. onions
3 ripe tomatoes
5 bacon strips

Cut bacon into cubes and pan fry until golden brown. Add onion rings and cook until transparent.

Meanwhile, rinse, cut out and discard pepper stems. Slice and add to the onions. Continue to cook until peppers are nearly done. Then add the sliced tomatoes and cook for about 5 minutes more.
