FETTUCCINE WITH A CREAMY
ASPARAGUS SAUCE
 
3/4 c. olive oil
1/4 c. chopped onions
3 3 c. chopped tomatoes
1/4 c. chopped parsley
1/4 c. sliced green olives
1/2 c. soy milk
2 c. sliced asparagus, bottoms removed
1 tsp. salt
1/2 tsp. pepper
6 c. cooked fettuccine

In a large saucepan, heat the oil over medium heat and saute the onions and tomatoes for 5 minutes. Add the parsley, olives, milk, asparagus, salt, and pepper. Cover, and simmer for another 5 minutes. Toss the sauce with the fettuccine and serve.
