MACAROON TOP APPLE PIE 
4 c. sliced apples (pippins are great
1/4 tsp. cinnamon
2 tbsp. butter
1 c. sugar (divided)
1 egg, beaten
1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. flour
1/2 tsp. vanilla
1/2 c. coconut

Peel apples and slice into buttered 9 or 10 inch glass pie plate. Mix into apples, 1/2 cup sugar and cinnamon, stirring to coat. Bake for 20 minutes at 375 degrees while preparing the topping.

TOPPING: Cream butter and 1/2 cup sugar. Add egg, then sifted dry ingredients, vanilla and coconut. Spread this over hot apples as evenly as possible. Bake 30 minutes longer until crust is golden brown. Serve warm or cold. Serves 6 to 8.
