BEEF STEW (OLD FASHIONED, IRISH) | |
2 1/2 lb. lean beef (chuck) 2 tbsp. flour 1 tsp. salt 1/4 tsp. pepper 1/4 tsp. paprika 3 tbsp. drippings 12 sm. onions 6 sm. carrots 8 potatoes 1 dessert spoon parsley Cut beef into 2 inch cubes. Mix flour with salt, pepper and paprika. Brown quickly in drippings. Add onion, chopped and brown a few minutes longer. Sprinkle over meat and remaining flour mixture; stir. Add enough hot water just to cover meat. Cover and simmer two hours or until tender. |
