MISSION ENCHILADAS 
12 flour tortillas
12 slices thin pressed ham
1 lb. grated Jack cheese
1 can whole green chilies cut in half
1/2 c. flour
1/4 lb. butter
4 c. milk
1 lb. grated sharp cheddar cheese
1 tsp. dry mustard
1 tsp. salt
1/4 tsp. pepper

To make Enchiladas; place one slice of ham on a tortilla, add half chili and some Jack cheese; roll into a tight cone. Place in a 12 x 15 inch pan.

To make sauce, melt butter in a large saucepan, add milk and stir until mixture thickens. Add cheddar cheese a little at a time until cheese is melted. Stir slowly, add mustard, salt, pepper. Pour over enchiladas. Bake at 350 degrees for 45 minutes. Serves 12.
