CHICKEN CHOW MEIN 
2 c. onion, finely chopped
1 c. celery, finely chopped
1 can Chinese vegetables
1 sm. can mushrooms
1 tbsp. salt
2 c. chicken, finely chopped

Fry celery in butter in covered pan until almost done. Add vegetables, mushrooms, and seasonings. Cook for 5 minutes. Add chicken. Serve piping hot with chow mein noodles (heated, if desired) and rice. Each person may season to his taste with soy sauce. Yield: 4 servings.
