GREEN TOMATO RELISH | |
3 red peppers 3 green peppers 15 lg. or 25 sm. green tomatoes 3 med. onions 2 lbs. sugar (scant) 1 tsp. mustard seed 1 tsp. celery seed A few whole cloves Chop and salt tomatoes; let stand overnight. In morning, drain well and cook in mixture of 1/2 cup vinegar and 1/2 cup water for 30 minutes. Drain well, then mix onion, peppers, and seasonings into tomatoes. Cover with pure vinegar; let come to a simmer and simmer slowly for 1 hour. Can while hot. Cut onions and peppers in the morning using medium chopper. |
