TANGY ONION SOUP 
1 lg. onion, chopped
4 tbsp. butter
3 tbsp. bourbon
2 c. beef bouillon
Salt and pepper to taste
2 slices sour dough bread, toasted
Parmesan cheese
Grated Monterey cheese

Saute onions in butter until transparent. Add bourbon and let it warm. Add bouillon and simmer for 15 minutes. Add seasonings. Pour into individual soup bowls. Top with toasted bread slices. Add grated cheese, etc. Melt under broiler.
