COCONUT DATE WHOOPERS 
3 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. butter
1 1/2 c. brown sugar
2 eggs
1 tsp. vanilla
1/3 c. milk

FILLING:

8 oz. chopped dates
1/2 c. water
1/3 c. sugar
2 3/4 c. coconut

Cook together filling ingredients until thick. Set aside.

Sift together dry ingredients. In large bowl with mixer at medium speed beat together brown sugar and butter. Add eggs and vanilla and beat well. Add dry ingredients alternately with milk.

Drop dough and fill in coconut. Make a depression in middle and fill with date mixture. Bake at 350 degrees until golden.
