FRENCH-TOASTED SEAFOOD SANDWICH 
2 c. cooked shrimp, chipped (or crab meat or fish)
1/2 c. chopped celery
2 tbsp. finely chopped onion
1 tsp. Worcestershire sauce
1/2 tsp. prepared mustard
1/2 c. mayonnaise
Salt and pepper to taste
12 slices white or egg bread, butter
2 eggs, beaten
1/4 c. milk
1/4 tsp. salt
3 tbsp. butter

Combine first six ingredients; add salt and pepper. Spread six slices of bread with seafood mixture and cover with remaining slices. Combine eggs, milk and salt; dip sandwiches in egg mixture.

In heavy skillet fry sandwiches in butter over moderate heat until filling is hot and egg crust is golden brown on each side. Serves six.
