IRISH MASHED POTATOES 
5-6 scallions
1/2 - 1 c. milk
1 stick butter
1 tsp. salt
Potatoes (2-3 lbs.)

Peel potatoes, quarter and cook about 35 minutes in water.

Chop scallions. Bring milk to a boil and add butter, stirring to melt. Add scallions and cook for several minutes. Mash potatoes, add the milk, scallions and salt.
