RICE AND BROCCOLI CASSEROLE 
1 large onion, chopped
3 tbsp. butter
1 pkg. chopped broccoli
1 can cream of celery soup
1/2 c. milk
1/2 lb. Velveeta cheese
3/4 c. uncooked rice

Saute onion in butter; add chopped broccoli to onion in skillet. Heat low until broccoli thaws. In large mixing bowl, add all other ingredients (cheese cut up in small pieces). Put in casserole dish and bake at 350°F for 20 to 30 minutes or until rice is done. Note: Instant rice can be used.
