CHOCOLATE PEPPERMINT SQUARES 
2 (1 oz.) sq. unsweetened chocolate
1 stick butter, softened
2 eggs, beaten
1 c. sugar
1/2 c. flour
1 c. nuts, chopped

SECOND LAYER:

1 1/2 c. confectioners' sugar
3 tbsp. butter, room temperature
1 1/2 tbsp. milk
1 tsp. peppermint flavor
3-4 drops green food coloring

THIRD LAYER:

1 1/2 sq. unsweetened chocolate
1 1/2 tbsp. butter, softened

Preheat oven to 350 degrees. Line an 8 inch pan with butter-coated foil, allowing extra length to extend over edges for easy removal.

First Layer: Melt chocolate and butter together over low heat in a saucepan. Stir. Combine eggs and sugar; beat until sugar is dissolved. Stir in flour, chocolate and nuts. Pour batter in pan and bake for 20 minutes or until toothpick inserted in center comes out clean.

Second Layer: Beat sugar and butter together in bowl. Beat in milk and peppermint flavoring. Spread over cooled first layer. Allow to set before adding third layer.

Third Layer: Melt chocolate and butter together over low heat. Pour over second layer, tilting pan so mixture covers second layer completely. Cool. Lift out by foil. Cut into squares. Yield 36 small squares.
