1 c. sugar 1 c. light corn syrup Salt 1/2 tsp. vanilla 1/4 c. butter 7/8 c. milk 2 c. pecans Cook sugar, syrup, and a few grains of salt rapidly to a firm ball stage (245 degrees), stirring occasionally. Add butter, milk and nut meats gradually so that mixture does not stop boiling at any time. Cook over medium heat to firm ball stage (242 degrees), stirring constantly because mixture sticks easily at the last. About 25 minutes are required for cooking. Add flavoring. Let stand until mixture stops bubbling. Drop into well-buttered muffin tins. Cool to room temperature. Makes about 30 pieces. |
