GIANT APPLESAUCE GINGER CAKE 
1 (16 oz.) can applesauce
1 c. molasses
2 tsp. baking soda

Heat applesauce. Stir in molasses and soda. Mixture will foam up. 1 1/3 c. sugar 2/3 c. vegetable oil

Beat eggs well, gradually beat in sugar; then oil. 1/2 tsp. salt 2 tsp. ginger 1 1/2 tsp. cinnamon 1/2 tsp. cloves

Mix dry ingredients together. Alternately fold flour mixture and applesauce mixture into egg mixture. 1 c. nuts, chopped

Stir in raisins and nuts, if desired.

Bake in greased and floured tube pan for 1 hour and 15 minutes at 325 degrees. Cool in pan 15 minutes.
