FRUIT MUFFINS 
2 c. sifted flour
3 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 c. shredded pared apples or 1/2 c. raisins
2/3 c. brown sugar
1/4 c. chopped nuts
2 eggs beaten
2/3 c. milk
1/4 c. shortening, melted & cooled
1 c. whole wheat cereal or bran flakes, crushed

Sift together first 5 ingredients. Stir in apples or raisins or both, brown sugar and nuts. Combine eggs, milk and shortening; add all at once, stirring just to blend. Fold in cereal flakes. Fill greased muffin pans 2/3 full. Bake at 400 degrees for 15 to 20 minutes. Makes 12 muffins.
