COLD ARTICHOKE SALAD 
1 pkg. chicken-flavored rice (I use MJB)
2 green onions, chopped
1/2 green pepper, chopped
2 (8 oz.) jars marinated artichoke hearts, drained (save liquid)
1/2 c. mayonnaise
1/4 tsp. curry powder
Black pepper

Cook rice as directed except omit butter. Cool. Add other ingredients, except artichokes, (but include marinade). Mix together, then add artichoke pieces. Chill. Serves 5 or 6.

Curry powder and black pepper are to taste (or optional). I add more green onions.
