1 onion, chopped
2 tbsp. butter
6 med. potatoes, cubed
2 carrots, diced
3 c. water
5 chicken bouillon cubes
3/4 tsp. salt
3/4 tsp. pepper
2 c. milk
1 c. Cheddar cheese

Saute onion - set aside. Place potatoes and carrots in large pot. Add water and bouillon cubes - cook until tender, mash - but leave lumpy. Add salt and pepper, cheese and milk. Simmer until cheese melts. Very good.
