FRESH SPINACH SALAD 
1 garlic clove, halved
2 tbsp. cider or red wine vinegar
1 tsp. sugar
1 tsp. salt
1 tsp. dry mustard
1/2 tsp. pepper
6 tbsp. salad oil
89 c. crisp young spinach, hard stems removed (2 to 2 1/2 lb.)
3 hard cooked eggs, grated
8 slices bacon, cooked and crumbled
2 or 3 green onions, chopped fine
Fresh mushrooms, sliced T shaped
Fresh cauliflower, sliced T shaped

Beat first 7 ingredients and refrigerate. Prepare remaining ingredients, add dressing just before serving, removing garlic.
