SPINACH SALAD 
1 lb. torn spinach, washed and stems removed
2 hard boiled eggs, sliced
6 lg. mushrooms, sliced
6 slices cooked bacon, crumbled
1 sm. red onion, thinly sliced

DRESSING:

In blender:

1/4 c. champagne vinegar
2 tbsp. minced garlic cloves
3 tbsp. chopped chutney
2 tbsp. mustard
2 tsp. sugar
1/2 tsp. salt
Pepper
1/2 c. oil, added while blender is running

Chill for a few hours.

Toss salad gently. Add dressing. Toss. Sprinkle with Parmesan cheese.
