CHILI RELLENOS 
4 oz. can long green chilies
1/4 to 1/2 lb. Monterey Jack cheese
1 1/2 c. milk
1 c. Cheddar cheese
4 eggs
1/2 c. flour
1/2 tsp. baking powder

Remove seed from chilies, shred cheese. Tuck cheese inside peppers. Place in buttered 1 1/2 quart baking dish. Beat eggs until foamy, add flour, milk, and baking powder. Beat until smooth. Pour over chilies. Cover with grated Cheddar cheese. Bake uncovered at 375 degrees for 30 minutes.
