PEANUT BUTTER SANDWICH COOKIES 
1 c. butter
1 c. brown sugar
1 c. crunchy peanut butter
3 c. flour
2 tsp. baking soda
1 c. sugar
2 eggs
1 tsp. vanilla
1/4 tsp. salt

Cream butter, sugar, and brown sugar until light and fluffy. Add eggs, one at a time, beating well. Blend in peanut butter and vanilla. Sift together flour, soda, and salt. Stir into creamed mixture.

Form mixture into 1-inch balls. Place 2-inches apart on greased cookie sheets; press dough by making a criss-cross pattern with a fork. Bake at 375 degrees for 8 minutes. Put together with filling when cooled.

FILLING:

1/2 c. crunchy peanut butter
1 tsp. vanilla
3 c. confectioners sugar
4 tbsp. milk
Sugar

Blend all ingredients together.
