POTATO PANCAKES 
About 4 medium sized potatoes, pared and chilled. Finely grate chilled potatoes and measure 2 cups. Place grated potatoes in clean cloth and press out excess moisture - until quite dry. Combine with:

2 well beaten eggs
2 tbsp. flour
1 tsp. baking powder
1 tsp. salt

Drop by tablespoonful onto hot, well-greased griddle. Cook over moderate heat 5 minutes on each side or until golden brown.

Makes 8 (3-inch) pancakes.
