POTATO PANCAKES 
3 med. potatoes
1 sm. onion
1 egg
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. baking powder
1/8 tsp. pepper
Crisco or oil

Grate potatoes and onion very fine. Drain through a fine sieve and remove all liquid. Beat the egg slightly in bowl. Mix potatoes and onion with the egg and stir in flour, salt, baking powder and pepper thoroughly.

Heat Crisco or oil in skillet and place a tablespoon of pancake mix into hot skillet. Fry only a few pancakes at a time so they don't run into each other. Spread and flatten pancakes with the cake of a spatula. When bottom side is crisp and brown, flip and brown other side. Keep pancakes warm until ready to eat.

Serve with hot applesauce or sour cream or eat plain. Country gravy would be yummy, too.
