ONION SHORT CAKE 
1 lg. sweet verdalin onion, chopped
1/4 c. butter
1 (8 1/2 oz.) corn muffin mix
1/3 c. milk
1 egg, beaten
1 sm. can cream style corn
2 drops hot sauce; optional
1 c. dairy sour cream
1/4 tsp. salt
1/4 tsp. dill weed
1 1/2 c. sharp shredded cheese

Cook onion in butter until tender. Mix corn muffin mix, egg, milk, corn, and hot sauce. Pour second mixture into greased 8 inch square pan.

Add sour cream, salt, dill weed, and 1/2 cup of the grated cheese to onion mixture.

Spread over batter in pan. Sprinkle the rest of the grated cheese over all. Bake at 425 degrees for 25-30 minutes.
