CHOPPED CHICKEN LIVERS | |
1 pound liver (can use calves' liver). Fry or brown lightly. Season a little with salt. In Crisco, fry 3 onions until golden brown. Season with salt and paprika. Use a little onion juice. Grind liver, onions and 4 hard boiled eggs. Melt about 2 or 3 tablespoons chicken fat to moisten liver. (Butter can be used if no chicken fat available.) Use a little lemon juice and season with more salt and pepper to taste. |
