CHRUSCIKI 
5 eggs
2 tsp. vanilla
1/2 c. sugar
2 tbsp. butter
1/2 tsp. salt
2 1/2 c. flour

Sift flour, sugar and salt. Cut in butter. Add vanilla to eggs and beat in large bowl until light and frothy. Mix thoroughly with flour mixture. Knead on floured board for 3 minutes. Roll dough about 1/8-inch thick and cut into 1 inch long strips. Cut into 4-inch lengths. Make small slit and put one end through slit. Drop knots into hot oil, a few at a time. Remove and drain on brown paper bags. When cool, toss with confectioners sugar.
