FETTUCINI ALFREDO 
2 tbsp. butter
4 c. whipping cream
1 tsp. nutmeg, grated
4 qt. water
2 tbsp. Parmesan cheese
1 sm. onion
2 tbsp. Parmesan cheese
1/2 tsp. salt & pepper
1 tbsp. salt
1 tsp. nutmeg, grated

Saute onion in butter. Stir in whipping cream until boiling. Stir 2 tablespoons cheese, 1 teaspoon nutmeg, 1/2 teaspoon salt and pepper. Reduce heat, simmer uncovered 30 minutes. Stir frequently. Boil fettucini separate. Do not rinse fettucini. Mix sauce and fettucini. Top with 2 tablespoons cheese and 1 teaspoon nutmeg.
