VEAL SCALOPPINI | |
1-1 1/2 lb. veal sliced into 2" rounds no more than 1/8" thick 2-3 c. Marsala wine 1 lb. mushrooms, sliced 1 bunch parsley, chopped 1-1 1/2 c. flour Salt, pepper & garlic powder to taste Oil or butter for frying Apply salt, pepper and garlic to the sliced veal. Sprinkle wine on each piece of veal. Coat the moist veal on both sides with flour. Fry the veal just to brown and set aside. Fry mushrooms and onion half way. Add veal to mushrooms and add chopped parsley and remaining wine. Simmer for 15 minutes. |
