GARDEN PARTY CARROT CAKE 
2 c. flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 tsp. salt
2 tsp. cinnamon
2 c. sugar
1 1/2 c. vegetable oil
4 eggs (or equivalent egg substitute)
2 c. grated carrots
1 can (8 1/2 oz.) drained crushed pineapple
1/2 c. chopped pecans

Mix all ingredients together. Blend well. Pour batter into tube pan. Bake at 350 degrees for 50 minutes. Cool in pan. Turn out on rack. When cool, frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

1/2 c. butter
1 pkg. (8 oz.) cream cheese
1 tsp. vanilla

Sift 1 pound confectioners' sugar. Add sifted confectioners' sugar gradually. Beat well. Serves 20.
