FRENCH MINT PIE 
1 c. butter
2 c. powdered sugar
4 sq. baking chocolate
4 eggs
1 tsp. peppermint flavoring
2 tsp. vanilla
2 c. vanilla wafers
18 sm. cupcake papers

Beat butter and sugar until light. Melt chocolate, let cool. Add to butter and sugar. Beat well. Add eggs, beat after each one. Add flavorings and beat. Crush vanilla wafers. Line cupcake papers with 1/2 vanilla wafers. Fill with chocolate mix. Place the rest of vanilla crumbs on top. Freeze. Serve with whipped cream.
