ZUCCHINI PARMESAN 
4 c. thinly sliced zucchini
1 tbsp. water
1/2 c. chopped onion
1 tbsp. butter
freshly ground pepper
3 tbsp. Parmesan cheese, grated

Put all ingredients, except cheese, in skillet. Cover and cook 1 minute. Uncover and cook until tender, turning with wide spatula. Sprinkle and toss with cheese.

Yield: 6 servings.
