FINNISH SOUR CREAM CAKE 
2 eggs, beaten
2 c. sugar
3 c. sifted white flour
1 tsp. baking soda
1/2 tsp. cinnamon
2 c. sour cream
2 or 3 drops almond extract
1/4 tsp. salt
1/2 tsp. cardamom

Combine eggs, sour cream, sugar and almond extract. Sift the flour with soda, salt, cinnamon and cardamom, add gradually to eggs mixture. Beat until smooth. Pour into buttered tube pan, dusted with cookie crumbs or sugar. Bake at 350 degrees for 1 hour. Cool for 5 to 10 minutes. Served un-iced on Finnish coffee. Table slice thin.
