RICE TORTA 
1 3/4 c. long grain white rice, washed, cooked and cooled
1 sm. onion, chopped fine
1/2 bunch fresh parsley, chopped fine
1 bunch fresh spinach, blanched, chopped fine
3 cloves garlic, chopped fine
2 tbsp. basil
2-3 tbsp. olive oil
1/2 cube butter
1 1/2 c. grated Parmesan cheese
5 eggs
Salt and pepper

Saute onion until transparent in oil and butter. Add parsley, basil and garlic and cook. Add spinach and cook another 2-3 minutes.

Add this mixture to cooled rice and mix thoroughly. Stir in eggs. Add Parmesan cheese and mix. Salt and pepper to taste.

Spread in 13x9 greased pan. Bake at 350 degrees F. for 30 minutes (or until knife comes out clean).
