SWEET POTATO CHIPS 
Oil for frying
3 lbs. yams
1 tbsp. Kosher (coarse) salt
1 tsp. paprika
1/8 tsp. red pepper

In large saucepan heat 2 inches oil to 325 degrees. In food processor or by hand, slice potatoes 1/16 inch thick. Fry in batches 3 minutes until golden (allow oil to return to 325 degrees between batches); drain.

In bowls mix seasonings; toss with warm chips. Makes 16 servings. Per serving: 161 calories, 1 g. protein, 24 g. carbohydrates, 7 g. fat, 407 mg. sodium.
